カシューナッツと豚肉の炒め物 Cashew nuts and pork stir fry

・500g 豚ヒレ肉

・醤油 またはポン酢 大さじ4

・無塩カシューナッツ 100g

・コーンスターチ 大さじ1

・ネギ2本 みじん切り

・生姜 2.5cm 皮をむき、すりおろす

・にんにく 2片 皮をむき細かく刻む

・赤ピーマン1個 スライスする

・新鮮なコリアンダー大さじ2 みじん切り

・植物油 大さじ2

・チキンストック 300ml

・中華麺 4人分


1.豚肉を2.5cm のスライスに切り、ボウルに入れます。


3.フライパンを熱くなるまで加熱し、カシューナッツを加え、2〜3分間、または焦げ色が着くまで、よく混ぜながら熱します。 お皿に移して置いておきます。

4.大きなフライパンを加熱し、大さじ2杯の植物油を加え、熱くなったらネギ、生姜、にんにくを加え、5分間または柔らかくなるまで炒めます。 お皿に移します。






Cashew nuts and pork stir fry

Savory, slightly spicy with the ginger and packed with flavor, this recipe is easy to make for family or lunch box.

· 500gr pork tenderloin

· 4 tablespoons soy sauce or ponzu

· 100gr unsalted cashew nuts

· 1 tablespoon cornflour

· 2 leeks, chopped

· 2.5cm piece fresh root ginger, peeled and grated

· 2 cloves garlic, peeled and fine chopped

· 1 red pepper, sliced

· 2 tablespoons fresh coriander, chopped

· 2 tablespoons vegetable oil

· 300ml chicken stock

· 4 egg noodle nests


1. Cut the meat into 2.5cm/1-inch slices and place in a bowl.

2. Blend the soy sauce and the cornflour together until smooth and free from lumps then pour over the pork. Stir until coated in the cornflour mixture, then cover with clingfilm and leave to marinate in the refrigerator for at least 30 minutes.

3. Heat a non-stick frying pan until hot, add the cashew nuts, and dry fry for 2 to 3 minutes or until toasted, stirring frequently. Transfer onto a plate and reserve.

4. Heat a work or large frying pan, add 2 tablespoons of vegetable oil and when hot, add the leeks, ginger, garlic and stir fry for 5 minutes or until softened. Transfer onto a plate.

5. Drain the pork, reserving the marinade.

6. Add the remaining oil to the wok, add the pork and stir fry for 5 minutes or until browned.

7. Return the reserved vegetables to the wok with the marinade and the stock.

8. Bring to the boil, then simmer for 2 minutes or until the sauce has thickened.

9. Stir in the toasted cashew nuts and noodle and chopped coriander and serve immediately.
